Apple & Bacon French Toast

For the French Toast:
- 1 loaf of French bread sliced into ½” slices
- 3 eggs
- ⅓ cup milk
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
For the topping:
- 5 slices bacon
- ¼ cup sugar
- juice of a lemon
- ½ tsp cinnamon
- 3 apples cored and sliced
In a shallow bowl, whisk together eggs, milk, cinnamon, and vanilla. Preheat a large skillet over medium heat. Add some of the butter and swirl to coat the bottom of the pan. Working in batches, dip the bread slices in the egg mixture on both sides, then add to the pan in a single layer. Cook until golden brown and crispy, about 3-4 minutes per side. Remove from heat to a plate and wipe the skillet clean with paper towel. Repeat with remaining bread slices.
While the French toast cooks, set another skillet over medium-high heat. When the skillet is hot, add the bacon and cook until it just begins to brown. Lower the heat and add sugar, lemon juice, and cinnamon, and cook, stirring occasionally, until sugar is dissolved and the mixture has thickened slightly, 4-5 minutes. Add the apples, and cook until softened, 4-5 minutes more. Remove from heat.
To serve, top French toast with apple-bacon mixture and whipped cream. Serve immediately!
